Baked Avocado Fries with Chipotle Cream Sauce

I've mentioned before how much I adore avocados. Whether they're grilled, mixed into a zesty dip, or in a salad, I simply can't get enough!


So I'm always on the lookout for new avocado recipes, like these avocado fries that were inspired by a recipe for zucchini fries that I tore out of a magazine. They're actually baked, not fried, so they're a healthier treat, and I've paired them with a yummy chipotle cream sauce for dipping.

Good Cook Avocado Slicer

Slicing avocados can be a bit of a pain, but a tool like this avocado slicer from Good Cook can make the job much easier. For best results use medium-size avocados that are just ripe -- if they're too ripe, you'll end up with mushy, messy slices.

Also shown are Good Cook's citrus reamer and citrus zester, both tools that I use often. I didn't use the zester in this particular recipe, but the citrus reamer is great for extracting small quantities of juice, like I used in the chipotle cream sauce.

Avocado Fries Recipe

Back to the avocado fries, once you've got your avocados sliced, you're ready for the messy part. Each slice gets dipped in a mixture of flour and spices, then into beaten egg, and finally in panko bread crumbs.

Place each slice on an oven-safe cooling rack that's set on a baking sheet, and mist them with olive oil or cooking spray. I like my Misto oil sprayer for this purpose.

When the avocado fries are done baking, sprinkle them with salt to taste. Cooking avocado mellows out the flavor, but the salt will perk them right up.

Serve them while they're still warm, creamy and delicious. I've included instructions for a chipotle cream sauce to dip them in, but ranch dressing would be fantastic, as well!

Avocado Fries

Yield: 4-6 servings

Avocado Fries

Ingredients:

  • 3 medium ripe avocados
  • 3/4 cup flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 3 large eggs
  • 1 1/2 cups panko bread crumbs
  • cooking spray or olive oil in a Misto
  • additional salt to taste
  • For the chipotle cream sauce:
  • 1 cup sour cream
  • 2 teaspoons fresh lime juice
  • 1 teaspoon adobo sauce

Instructions:

  1. Cut avocados in half and remove the pits. Use a Good Cook Avocado Slicer to slice them, or carefully peel and slice them with a knife.
  2. Whisk together flour, salt, cumin, and chili powder. Set up your prep area with a plate with the flour, a shallow bowl with the beaten eggs, and a plate with the panko bread crumbs.
  3. Dredge each slice of avocado first in the flour, then the egg, and finally in the panko bread crumbs. Place each slice on an oven-safe cooling rack set over a baking sheet. When all of the slices are breaded, give them an even coating of cooking spray or olive oil.
  4. Bake at 350 degrees for approximately 18-20 minutes, until golden brown.
  5. While the avocado fries are baking, mix the sour cream, lime juice, and adobo sauce together for the chipotle cream sauce.
  6. When the avocado fries are done baking, season them to taste with additional salt. Serve warm with chipotle cream sauce.
