When the Beef Checkoff asked me about my favorite easy beefy weeknight meal, it was a no brainer… I first shared this copycat Chipotle Barbacoa recipe just a little over a year ago, and it’s quickly grown to be one of the most popular recipes on my site!
And with good reason. It’s made in the slow cooker, so it’s super easy to make, and it’s such a versatile meal. We alternate serving it over Coconut Milk Rice (a la Chipotle’s burrito bowls) with turning it into barbacoa soft tacos.
