Wow, this summer just flew by… didn’t it? Between softball, baseball, afternoon pool lounging and trips to the beach, the days are all just kind of a blur — but they’re one big, happy, fun-filled blur! Yes, there was also a fair amount of sibling squabbling at times, but I have to say I’m sad to see it come to a close.
One of our big family resolutions for the summer was to eat at home more often and to eat more healthfully. I figured a reset of our eating habits would be a little easier during the summer months, away from the school year candy reward temptations (why is it that candy and school seem to go hand in hand these days anyway???), and I was totally right.
Although, I do have to say that shopping for natural and organic foods presents a bit of a learning curve. At most stores, these options are mixed on the shelves with conventional options and aren’t always easily identifiable, greatly decreasing the speed at which I can navigate the grocery store. This is one of the reasons why I love to shop at Kroger!
Kroger has a natural foods department that’s completely separate from the conventional foods, which really simplifies the process of choosing organic and natural foods.
It’s like a one-stop shop, with its own freezer section and dairy case, and in my local store, it’s also conveniently located right next to the fresh produce department. Plus with their newer lower prices and budget-friendly Simple Truth brand, eating better doesn’t have to break the bank.
Simple & Wholesome Fruit Pizza Recipe
One of the keys to getting my kids engaged in trying to eat better was to allow them to assist in creating recipes, and one of our favorite creations is this simple and healthy fruit pizza recipe. Paired with Horizon Organic Lowfat Milk, it’s a delicious and nutritious treat any time, and I’m quite sure it’s going to be one of our go-to after school snacks.
Most fruit pizza recipes start with a sugar cookie crust, which really drags the healthy factor way down. It was actually my kids’ idea to try using a waffle as the crust, and these Simple Truth Multigrain Waffles were a total hit. Crispy, crunchy and flavorful, they’re a much better alternative to sugar cookies — and they’re tons easier for my kids to prepare whenever they’re in the mood!
A simple whipped mixture of Horizon Organic Cream Cheese and sugar with a touch of vanilla provides a sweet and creamy contrast to your favorite fruits and berries. You really only need a very thin layer, and any extra can be refrigerated for future snacks or to be spread on toast and bagels.
Or if you want to forgo the cream cheese mixture, you might try using yogurt instead. Might I suggest Yulu Yogurt? It’s amazingly creamy and delicious, and my kids happen to adore it.
I love that this healthy fruit pizza recipe is so easily customizable! Choosing in season fruits and berries creates the most flavorful fruit pizza — and helps to keep the costs down.
We topped ours with fresh raspberries, blueberries and kiwi, along with a drizzle of Simple Truth Orange Blossom Honey, but strawberries, blackberries, orange slices and peaches would all be great choices. I’ll be honest… this is one of my favorite snacks, too!
