I've never been one to pass up a good peanut butter/chocolate combo -- my homemade buckeyes are a tailgating and holiday staple! In fact, they were the inspiration behind these ah-mazing peanut butter brownie cups that I developed for the Reese's Baking Bracket Challenge.

Sweet and salty, creamy and decadent, these peanut butter brownie cups are the perfect treat to savor with a big, cold glass of milk while cheering on your favorite college basketball team in their end of season tournament. Plus, the personal cup size makes them super easy to serve... Double bonus!

Peanut Butter Brownies Recipe

I started by making my favorite brownie batter and spooning about 2 tablespoons of it into each cup of a muffin tin lined with foil baking cups. I used my medium cookie scoop for this part, and it was the perfect size. You can also substitute your favorite store-bought brownie mix for this step -- no shame in that!

For the peanut butter layer, I mixed together softened cream cheese, sweetened condensed milk, Reese's creamy peanut butter and a touch of pure vanilla extract. Using my small cookie scoop, I placed a heaping tablespoon-sized dollop on top of the brownie batter in each cup.

I finished off these peanut butter brownie cups with a drizzle of chocolate ganache and some coarsely chopped REESE'S(R) Peanut Butter Cups. To. Die. For!

Peanut Butter Brownie Bites

Yield: 12 peanut butter brownie cups

Peanut Butter Brownie Bites

Ingredients:

    For the brownie layer:
  • 3/4 cup salted butter, melted
  • 1 1/2 cups granulated sugar
  • 2/3 cup Hershey's cocoa powder
  • 2 teaspoons pure vanilla extract
  • 3 eggs
  • 1 cup all-purpose flour
  • For the peanut butter layer:
  • 2/3 cup sweetened condensed milk
  • 1/2 cup cream cheese (1/2 pkg.), softened
  • 1/4 cup Reese's creamy peanut butter
  • 1/2 teaspoon pure vanilla extract
  • For the ganache layer:
  • 1/2 cup Hershey's milk chocolate chips
  • 1/4 cup heavy cream
  • 12 Reese's peanut butter cups miniatures, coarsely chopped

Instructions:

    For the brownie layer:
  1. Preheat over to 350 degrees.
  2. Line a 12-cup muffin tin with foil cupcake liners.
  3. Melt the butter on the stove top in a sauce pan or in the microwave. Whisk in sugar and cocoa powder, and then stir in vanilla extract.
  4. In a medium mixing bowl, whisk the eggs well, and then whisk in the chocolate mixture until well combined. Stir the flour into the chocolate mixture until just combined.
  5. Spoon about 2 tablespoons of the brownie mixture into the foil baking cups.
  6. For the peanut butter layer:
  7. Beat the cream cheese with an electric mixer until light and fluffy. Then beat in the sweetened condensed milk, peanut butter, and vanilla extract until creamy.
  8. Spoon one heaping tablespoon of the peanut butter mixture on top of the brownie layer in each cup.
  9. Bake at 350 degrees for about 18-20 minutes or until the peanut butter layer is golden brown on the edges and set. Cool for at least 30 minutes.
  10. For the ganache layer:
  11. Heat the cream in a small saucepan over medium-low heat until hot but not simmering.
  12. Whisk in the milk chocolate chips until thoroughly incorporated.
  13. Drizzle over the top of each peanut butter brownie bite and top with chopped Reese's peanut butter cups miniatures.

Can’t wait to make these for my grandson but can you tell me how much heavy cream is used in the ganache? I believe there is an error in1/24 cup. Thank you and love your website.

Oh, goodness — thanks for pointing that out! I’ll update the recipe now, but it should be 1/4 cup, and you can actually warm it in the microwave if you want. Our microwave fizzled out about a month ago, and we haven’t replaced it yet.
