It’s true… my kids are classic veggie haters, and I have no idea how it came about. They all loved their veggies when they were little, and I’ve always served them daily with meals, but these days, it’s a no go. My oldest boys will at least try them, but my girls and youngest boy will do anything to avoid even tasting them.
However, it dawned on me the other day when we went out for dinner that they will actually eat them if they’re somewhat disguised! For example, my oldest daughter adores spinach artichoke dip. Do you think she’d normally even consider nibbling on an artichoke or spinach leaf in a salad? Heck no! But mix them into a cream cheese and mozzarella dip, and she’ll devour the whole bowl by herself.
So when I spied this Spinach and Artichoke Macaroni & Cheese recipe from Every Day by Rachael Ray, I knew we had to test it out! It starts with new Horizon® Pasta Shells & White Cheddar Cheese, which means I can have it on the table in about 20 minutes flat.
I’ll be completely honest — boxed macaroni and cheese has been all but banned from our home for several years now, but after reading that all Horizon Mac & Cheese products are made with real, USDA-certified organic cheddar cheese, as well as USDA-certified organic wheat pasta, I figured it wouldn’t hurt in moderation.
This delicious mac & cheese dish is so much tastier and, dare I say easier, than a trip through the fast food drive-thru. Plus, the ingredients are perfect to keep on hand, making this is a quick and easy meal that I can feel good about serving to my kids.
And the taste? Well, let’s just say that I’m fairly certain my kids would have licked their bowls completely clean had I not pried them out of their hands!
