With just 4 ingredients and only 30-minutes of baking, these amazing baked boneless skinless chicken thighs are sure to become a weeknight staple. Winner, winner, chicken dinner!



  1. Preheat the oven to 425 degrees.
  2. In a small mixing bowl, whisk together the coconut oil, Dijon mustard, poultry seasoning, and salt.
  3. Arrange the chicken thighs in a 9×13” baking dish. Brush the mustard glaze mixture evenly over the top of each thigh. Add freshly ground black pepper to taste.
  4. Bake uncovered for 30 minutes or until a meat thermometer reads 165 degrees when inserted into the center of one of the chicken thighs.
