Chocolate Avocado Pudding Recipe
By this point you’re probably wondering how chocolate pudding fits in with a healthier lifestyle… Perhaps you’ve heard of chocolate avocado pudding? Yeah, yeah, I was skeptical too, but it’s actually pretty amazing and an awesome, healthy treat.
My chocolate avocado pudding recipe gets a double-dose of plant-based ingredients by incorporating both avocados, which are packed with lots of healthy fats, and Silk Unsweetened Coconutmilk, which adds even more flavor and creaminess. Are you surprised?
You don’t have to take my word for it, though. I tested out my chocolate avocado pudding recipe the best way I know how — by serving it to my 5 unsuspecting kids. Aaaaannnddd, they loved it!
They do prefer it a little sweeter than I do, so I use 1/2 cup of sweetener when I’m preparing it for them, and they like it without the cinnamon. Personally, I like to only use about 1/3 cup of sweetener and add about 1/2 teaspoon of cinnamon to mine. But since it only takes minutes to make a batch, I can easily prepare two different variations to please everyone!Print
- 2 ripe avocados
- 1/2 cup unsweetened cocoa powder
- 1/3-1/2 cup agave nectar or honey (to taste)
- 1/2 cup Silk Unsweetened Coconutmilk
- 2 teaspoons pure vanilla extract
- 1/8 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- Slice the avocados in half, remove the pit, and scoop the flesh out into a blender or food processor.
- Add the remaining ingredients, and blend or process until completely smooth.
