I’ve been eagerly anticipating summer break, while at the same time dreading it… Don’t get me wrong — I love spending time with my kids. But things get a little crazy around here when they’re all home all. day. long.
I have to savor the few quiet moments I get throughout the day, which is why I look forward to afternoons when most or, when it’s my lucky day, all of them head to the local pool. I do go hang out with them occasionally, but as a bit of an introvert, some days I really just need a little down time to myself.
More often than not, I spend this time in the kitchen — cutting up fruit for snacks, prepping veggies for dinner, and occasionally baking treats, like these yummy cinnamon tea cookies.
I love this cinnamon tea cookies recipe because the cookies it produces aren’t overly sweet, it makes a small batch, and the cookies themselves are rather small. They pair perfectly with hot chai tea, my beverage of choice for sipping throughout the day.
But when I really want to treat myself, I whip out my box of TAZO® Chai Latte K-Cup® pods to make myself the world’s easiest chai tea latte! To be honest, I didn’t even know that there was such a thing until I received a Sweet Meets Spicy sample package from TAZO®, but they’re seriously SO good.
If you’ve never had a chai tea latte, you’ve been missing out on a delicious blend of black tea, cinnamon, ginger, cardamom and vanilla. Making them with your Keurig® brewer is super easy! Simply open the sweetened dairy packet and dump it into your mug, and then brew one of the TAZO® Chai Latte K-Cup® pods over top. Stir it all together, and voila — a hot and delicious chai tea latte that rivals anything you’ll get at your local coffeehouse!
I typically drink my chai tea straight up without any sweetening, so these are a tad on the sweet side for me when I make them as directed with an 8-oz. brew. But I’ve found if I select the 10-oz. setting, it waters it down just enough to satisfy my tastebuds. Of course, this probably won’t be an issue for the vast majority of you.
It doesn’t get much better than a homemade chai tea latte and a couple of these cinnamon tea cookies! And of course I save the rest of the batch for my hungry kiddos to chow down on when they get home. Well, usually…
Just a quick couple of notes about these cookies:
- The dough is very soft and sticky, but you should still be able to roll it into balls easily.
- Because of the high butter content, these cookies spread a lot. So take care to leave the recommended 2-inches around all sides of each cookie.
- If you like a crispy cookie that’s not overly sweet, you’re going to adore these!
