Back at the beginning of June, I took a trip out to Bentonville for the annual Walmart Shareholders Meeting. Sounds kind of boring, right?
You’d think, but it’s actually tons of fun — like a big party with performances by some of the top names in the music industry. This year Harry Connick Jr. hosted (love him!!!), and we saw performances by Pharrell, Robin Thicke, Florida Georgia Line, and more.
In reality though, I’d go just to see some of the wonderful, creative, and talented blogging friends that I’ve made over the years. After the meeting, we all got to hang out together at the Jackson House, an amazing old Craftsman-style house that Walmart has restored to use for business purposes, and they fed us way too much delicious food (never a bad thing in my book)!
One of my favorite recipes was this out-of-this-world grilled potato salad. Grilled potato salad?!? I mean, hello… Why didn’t I think of this years ago? Filled with grilled potatoes, onion, jalapeño peppers and diced bacon, it’s nothing short of fabulous. And yes, it’s a tad on the spicy side, but if you want to tame the heat, simply reduce or eliminate the jalapeño peppers.
If you don’t own a grill topper or basket for your grill, it’s a solid investment. We own both, and it makes preparing side dishes when grilling out uber simple. We just chop up whatever vegetables we have on hand, drizzle some olive oil over them, hit them with a little salt and pepper, and grill along with whatever our main dish is.
As I mentioned in the quick demo above, I picked up this Backyard Grill Gourmet Grill Topper at Walmart. It works on any grill, and has a durable non-stick, scratch-resistant porcelain coating; however, I still recommend using silicone or wooden utensils to prevent scratches.

Smokey, spicy, with just a touch of sweetness, this grilled potato salad is sure to be the center of attention at your next backyard gathering!Print
- 6 medium red potatoes, diced into medium size pieces
- 1 large sweet yellow onion, sliced onion ring style
- 2 large jalapeño peppers, cut in half and deseeded
- 8 slices cooked thick cut bacon, diced
- 1/4 cup olive oil
For the seasoning:
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons paprika
- 2 teaspoons celery salt
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 1 teaspoon black pepper
For the salad dressing:
- 1/4 cup mayonnaise
- 2 tablespoons dijon mustard
- 2 tablespoons brown sugar
- 1 tablespoon steak sauce
- In a small bowl, mix together the ingredients for the potato rub seasoning and set aside.
- In a large bowl, combine the potatoes, onions, jalapeño peppers, and olive oil. Toss to coat. Add the rub seasoning and combine thoroughly.
- Grill the potato mixture over medium heat in a grill basket or on a grill topper until the potatoes are fork tender, about 25 minutes.
- While the potato mixture is grilling, combine the salad dressing ingredients and refrigerate.
- When the potato mixture is done grilling, roughly chop the onions and jalapeño peppers. Add the bacon to the mixture, pour the salad dressing over the top, and combine thoroughly.
Note: You may be tempted to double the salad dressing, but trust me, it’s plenty to cover everything!
