With each season, there’s always that one fruit that I find myself looking forward to… Crisp apples in the fall, sweet clementines in the midst of winter, fat berries (blueberries, strawberries, raspberries, I LOVE them ALL!) in spring, and peaches so juicy you need to eat them over the kitchen sink in summer.
I was SO happy to find the first of those peaches in the produce department the other day. Of course I HAD to bring some home with me. And they’re actually the inspiration behind this refreshing peach crisp cocktail that I developed for summer entertaining in collaboration with Chila ‘Orchata!
Though the official start of summer is still a few days away, the heat index here in Ohio says otherwise. I just love these early warm summer nights! More often than not, you’ll find me out on our back patio each evening on the amazing pergola swing that my hubby built, sipping on this lovely summery concoction of Chila ‘Orchata, peach vodka, and vanilla simple syrup.
Not familiar with Chila ‘Orchata? I’m so happy to introduce you, and boy, are you in for a treat! Chila ‘Orchata mixes the richness of Puerto Rican rum, the spice of cinnamon horchata, and the sweetness of Tahitian vanilla for a creamy and delicious result. They call it pure bliss in a bottle, and I would have to agree!
It’s excellent as is, served over ice, but it’s also the perfect base for a myriad of summer cocktails. You can find tons of suggestions on their Pinterest account, and I’m going to share my peach crisp cocktail in just a moment. But first let me tell you how to make the vanilla simple syrup — you don’t want to skip it!
Vanilla Simple Syrup
The vanilla simple syrup is an essential part of this cocktail. I highly recommend making a bottle to keep on hand, because it really lends a distinctive level of complexity to summer drinks — not to mention it’s amazing in iced coffee! I also used it to rim the glass for this cocktail with crushed cinnamon graham crackers. #yum
I’ve shared my favorite double strength simple syrup recipe before, and it’s the base for this vanilla simple syrup recipe. Simply prepare the recipe as directed, then stir in two tablespoons of pure vanilla extract while the syrup is cooling. Be sure to use the real stuff! That faux stuff is totally banned from my kitchen…
Peach Crisp Cocktail
With just three ingredients (plus a garnish), this peach crisp cocktail really is nearly effortless. Stir together two parts Chila ‘Orchata, one part peach vodka, and one-half part vanilla simple syrup. Pour over ice in a glass that’s been dipped in more simple syrup and crushed cinnamon graham crackers, and it’s ready to drink. To me it tastes like summer in a glass!
If you’re entertaining guests, you can even make a big pitcher of it so you’re not mixing all night long. Or maybe one of the 1-liter Weck Juice Jars? I think they’re SO beautiful, and 2 cups of Chila ‘Orchata + 1 cup of peach vodka + 1/2 cup of vanilla simple syrup would just about fill one up. This is easy summer entertaining at its best!
