Roasted Parsley and Garlic Fingerling Potatoes

Ingredients

  • 2 pounds fingerling potatoes
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons flat leaf parsley, chopped
  • salt
  • pepper

Instructions

  1. Whisk together the olive oil, garlic, lemon juice, parsley and salt and pepper to taste.
  2. Toss the fingerling potatoes in the mixture, and spread them out in a single layer on a baking sheet.
  3. Roast at 450 degrees for approximately 30-35 minutes.
