Pumpkin Chocolate Chip Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 (15-oz.) can pumpkin puree
  • 1 cup sugar
  • 8 tablespoons butter, melted and cooled
  • 1/3 cup strong brewed Dunkin' Donuts Pumpkin Spice Coffee
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup dark chocolate chunks

Instructions

  1. Preheat oven to 350 degrees. Grease one 9.25”x5.25” loaf pan.
  2. Whisk the flour, baking soda, baking powder, pumpkin pie spice and salt together in a large mixing bowl. In a medium mixing bowl, whisk the pumpkin, sugar, melted butter, coffee, eggs, and vanilla together until smooth.
  3. Fold the pumpkin mixture into the flour mixture until just combined. Gently fold in the chocolate chunks.
  4. Scrape the batter into the prepared loaf pan, and use a spatula to smooth out the top.
  5. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean. Rotate the pan halfway through baking. If the bread begins to over-brown, cover with foil and continue baking until done.
  6. Cool at room temperature for 10 minutes and remove from pan to a wire rack to continue cooling.
