Hungarian Marinated Tomato Salad (Paradicsomsaláta)

This Hungarian marinated tomato salad is *totally* the reason I fell in love with tomatoes. Filled with sweet & juicy cherry tomatoes, Hungarian wax peppers, cucumbers, and thinly sliced onions, this cherry tomato salad is a perfect simple side dish for any occasion!

Ingredients

For the cherry tomato salad:

  • 2 (10-oz.) containers NatureSweet Glorys cherry tomatoes, halved vertically
  • 1 cucumber, peeled & sliced in thick half circles
  • 2 Hungarian wax peppers, seeded & sliced in half moons
  • 1/2 medium white onion, sliced thin

For the cucumber tomato salad dressing:

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. In a large bowl, combine the sliced NatureSweet Glorys cherry tomatoes, sliced cucumbers, sliced Hungarian wax peppers, and sliced onions.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, minced garlic, sugar, salt, and pepper.
  3. Pour the salad dressing over the tomatoes, cucumbers, peppers, and onions, and toss to combine.
  4. Refrigerate to marinate for 1-2 hours. Season with additional salt and pepper to taste before serving.
