  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl, combine flour, sugars, baking powder, espresso powder, cinnamon and salt. Whisk to combine thoroughly.
  3. In a separate bowl, whisk together egg, milk , melted butter, and vanilla extract. Stir into dry mixture until combined. Fold in chocolate chips.
  4. Fill paper-lined or greased muffin cups 3/4 full. Tip: try these parchment paper muffin liners!
  5. Bake at 375 degrees for 22-24 minutes, or until a toothpick comes out clean.
  6. Cool for 2-3 minutes and remove from muffin pan to a wire cooling rack.
