  1. Drizzle the oil of your choice in a large skillet set over medium-high heat. Add the diced chicken to the pan, and then pour the soy sauce over top. Sauté for about 10-12 minutes, until the chicken is fully cooked.
  2. Stir 3/4 cup of the peanut sauce into the chicken, and continue to cook until the sauce is warmed through.
  3. Serve with brown rice and colorful sliced veggies. Garnish with chopped unsalted roasted peanuts, as desired.
