Ingredients

For the salad:

  • 1 (20-oz.) pkg. frozen green peas*
  • 1 cup chopped celery
  • 1/3 cup chopped red onion
  • 1 cup dry roasted peanuts
  • 6 slices thick cut bacon, cooked & crumbled

For the dressing:

  • 1/3 cup sour cream
  • 1.5 tablespoons mayonnaise
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons sugar
  • salt & freshly ground black pepper, to taste

Instructions

  1. In a small mixing bowl, whisk together the sour cream, mayonnaise, apple cider vinegar, and sugar.
  2. In a large mixing bowl, combine the frozen green peas, celery, and onion. Pour the dressing over the top, and toss to combine. Refrigerate for at least two hours.
  3. Before serving, stir in the crumbled bacon and roasted peanuts. Season with salt and freshly ground black pepper to taste.

Notes

*Frozen peas come in many different sized packages, so just try to come close to the amount listed in the ingredients. If you have a little more or a little less, it won't compromise the recipe at all.
