Wash the potatoes and slice into desired size fries.
Place the cut potatoes in a large bowl and fill with cold water until they're completely submerged. Let them soak for at least 30 minutes. Then remove the potatoes from the water and dry well with a clean, lint-free kitchen towel.
Lay the fries out on the towel to continue to dry while preheating the oven to 375 degrees.
When the oven is ready, toss the potatoes with the olive oil and kosher salt in a large bowl. Spread the fries out in a single layer on a rimmed baking sheet.
Bake at 375 degrees for 20 minutes. Then turn the oven up to 425 degrees and cook until golden and crispy, about 20-25 minutes longer.
