No-Bake Haystack Cookies

Made with just four ingredients and ready in 10 minutes + cooling time, these salty-sweet haystack cookies, filled with white chocolate, salted dry roasted peanuts, and dried cranberries, are sure to be a holiday (and every day) hit!

Instructions

  1. Melt the white chocolate chips in the microwave or in a double boiler on the stovetop until smooth.*
  2. Add the chow mein noodles, peanuts, and dried cranberries. Stir to mix well.
  3. Drop by rounded spoonfuls onto a baking sheet lined with parchment paper.
  4. Cool for at least one hour before removing the haystack cookies from the parchment paper.

Notes

*How To Melt White Chocolate

1. Stovetop -- heat the white chocolate chips in a double boiler (try this double boiler diy) over gently simmering water, stirring until smooth.

2. Microwave -- heat white chocolate chips in a microwave safe bowl at medium power (50%) for 1 to 1 1/2 minutes. Stir until bowl no longer feels warm. Continue heating at 15-30 second intervals, stirring until smooth.
