Marinated Cherry Tomato Salad
This Hungarian marinated tomato salad is *totally* the reason I fell in love with tomatoes. Filled with sweet & juicy cherry tomatoes, Hungarian wax peppers, cucumbers, and thinly sliced onions, this cherry tomato salad is a perfect simple side dish for any occasion!
Servings: 8 servings
Ingredients
For the cherry tomato salad:
- 2 (10-ounce) containers cherry tomatoes halved vertically
- 1 English cucumber peeled and sliced in thick half circles
- 2 Hungarian wax peppers seeded and sliced in half moons
- ½ medium yellow onion sliced thin
For the cherry tomato and cucumber salad dressing:
- ½ cup extra-virgin olive oil
- ¼ cup apple cider vinegar
- 2 garlic cloves minced
- ½ tablespoon granulated sugar
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
Instructions
- In a large bowl, combine the sliced NatureSweet Glorys cherry tomatoes, sliced cucumbers, sliced Hungarian wax peppers, and sliced onions.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, minced garlic, sugar, salt, and pepper.
- Pour the salad dressing over the tomatoes, cucumbers, peppers, and onions, and toss to combine.
- Refrigerate to marinate for 1-2 hours. Season with additional salt and pepper to taste before serving.
