These no bake peanut butter oatmeal bars are an endlessly customizable snack idea! They start with a simple mixture of peanut butter, sweetener, and rolled oats. Then add 1 ½ cups of your favorite mix-ins to make them your own.
In a saucepan, warm your choice of peanut butter and sweetener over low heat until they can be mixed together easily. You could also warm them in the microwave if you watch the mixture carefully to prevent it from boiling over.
Stir in the rolled oats and your choice of mix-ins until thoroughly combined.
Line a 9x9" baking pan with parchment paper. This makes it easy to lift the whole bar out for cutting.
Press the oatmeal mixture evenly into the pan and allow it to cool. If desired, place the pan in the fridge for 30 minutes to speed cooling.
Lift the entire cooled bar out of the pan and cut into 12 bars.

Mix-In OptionsAdd your choice of up to 1 ½ cups of mix-ins to the oatmeal peanut butter mixture. We generally choose 3 options and add ½ cup of each.

To make the bars pictured use: 1 cup all-natural almond butter, ¾ cup honey, 3 cups rolled oats, ½ cup unsweetened shredded coconut, and ½ cup dried cranberries.Storage: Leftovers can be stored in an airtight container at room temperature for up to 3 days.
