In a medium mixing bowl, mix all of the ingredients together until smooth.
Use a small 2-teaspoon cookie scoop to portion out the dough, rolling each portion into a ball shape. Dip each ball into the chopped peanuts, as desired.
Place the protein balls on a baking sheet lined with parchment paper, and refrigerate for 30 minutes to firm up.
Store in the refrigerator in an airtight container for up to 2 weeks.
