Made in your slow cooker, this easy pork chops and sauerkraut recipe has the traditional flavor you crave without all of the fuss! Uses bone-in pork chops, sauerkraut, and baby yellow potatoes for an all-in-one meal with side dishes included.
Heat a large skillet over medium-high heat and add the Wesson canola oil.
Season the pork chops on both sides with salt and freshly ground black pepper. Sear on both sides until golden brown.
Pour 1 cup of water into a 6-qt. slow cooker. Then add the sauerkraut, seared pork chops, and baby potatoes in layers, finishing with a layer of sauerkraut. Sprinkle caraway seeds over top, if desired.
Cook on low until pork chops are tender, about 8 hours.
Recipe Notes
Alternative serving idea: omit baby potatoes and serve with creamy mashed potatoes on the side, using the sauerkraut juices as "gravy".
