This bold ribeye steak marinade for grilling starts with strong brewed coffee combined with oil, vinegar, and aromatics to tenderize and enhance the beef's natural flavor.
Whisk the cooled coffee, balsamic vinegar, olive oil, brown sugar, minced garlic, crushed peppercorns, and salt together.
Place steaks in a shallow dish or a zip-top marinating bag. Pour the marinade over top and turn to coat. Chill steaks in the refrigerator for 2 to 4 hours (or up to 8 hours depending on cut).
Let the meat come to room temperature for 30 minutes. Shake any excess marinade off the steaks to avoid flare-ups. Pat the surface dry with a paper towel. Season lightly with kosher salt.
Clean and oil the grill grates. Grill steaks over high heat for 3-5 minutes per side. Cook until an instant-read thermometer reads 130°F for medium-rare.
