These flavorful Italian oven roasted baby potatoes are my go-to side dish for just about everything... Easy, fast, and made with pantry staples, they're a total winner!
Preheat oven to 425°F degrees. Slice potatoes lengthwise.
Add potatoes to a large mixing bowl. Toss with avocado oil, Italian seasoning, garlic powder, salt, and freshly ground black pepper.
Position potatoes cut side down on a large baking sheet. Bake at 425°F degrees for 23-25 minutes or until the potatoes are golden brown on the cut side and can easily be pierced with a fork.
Season with additional salt and pepper to taste. Serve warm.

*Italian Seasoning This roasted baby potatoes recipe has been tested with my go-to brand of Italian seasoning. It is a coarser mix then most other Italian seasonings. If you use a brand that is more finely ground or powder-like, you may want to start with less than the recipe calls for and add more as needed.
