You guys, winter weeknight meals are a serious struggle for me. Same? I mean, nearly every day my kids bust in the door from school demanding: MOM, what’s for dinner?! And my answer is generally: um, I have NO idea…
It’s kind of a running joke in our family, because I pretty much never know what’s for dinner ahead of time. Summer weeknight dinners are infinitely easier, as there’s more of a method to my madness. Weeknight Chicken Fajitas In The Oven
Here’s the thing — I know my strengths, and I know my weaknesses. Meal planning is definitely NOT one of my strengths (maybe because it seems so rigid?), but throwing together a last minute dinner IS. So instead of planning out our meals for the week, I just make sure to pick up the ingredients for some of our favorite quick and easy meals when I’m doing my weekly grocery shopping.
Like these easy sheet pan chicken fajitas that my WHOLE family adores! They have all of the flavor of more labor intensive grilled chicken fajitas, but they can be ready in a fraction of the time — thanks to some simple shortcuts…
Oven Baked Chicken Fajitas Ingredients
These oven baked chicken fajitas are made super simple courtesy of Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips. Starting off with these wholesome fully cooked and flash frozen grilled chicken strips allows me to skip over many of the messier, more time-consuming steps of prepping the chicken fajita ingredients.
Uh, wholesome? Yes! They’re 100% all natural, which means they’re minimally processed with no artificial ingredients — so I can feel good about serving them to my family.
What else do you need to make these easy chicken fajitas? Just a few additional simple ingredients that are ones I almost always already have on hand: colorful bell peppers, red onion, garlic, chicken fajita seasoning, and fresh limes.
Of course, you’ll also need some flour tortillas for serving and all of your favorite fajita toppings. Or keep it simple and forgo the toppings, because they’re totally tasty all on their own. But if you’re feeling like you want to make your fajitas a little extra, topping options we love are: pico de gallo, guacamole, crumbled cotija cheese, crema Mexicana (pourable Mexican crème fraîche), chopped cilantro, and lime wedges for squeezing over top.

How To Make Chicken Fajitas In Your Oven
The main thing I love about sheet pan recipes is that there’s usually just one pan to clean up, and this sheet pan fajitas recipe is no exception. You simply toss together the chicken, bell peppers, red onion, and garlic with a little olive oil and seasoning, and bake at 425 degrees F until the chicken is warmed through and the veggies are crisp-tender. Squeeze some fresh lime juice over the top, and it’s ready to serve.
How easy is that? The EASIEST I’d say… In the meantime, you can get all of your fajita toppings ready to go, help the kids with their homework, prep tomorrow’s lunches, and/or sip a glass of wine — because you just checked the hardest part(s) of your evening off your list!

Want to shave even more time off getting a batch of hot and delicious sheet pan chicken fajitas on the table? Good, because I’ve got some more tips to share. Pick and choose what works best for your weeknight meal situation.
- Use Tyson® Grilled & Ready Fully Cooked Fajita Chicken Strips, instead of the plain chicken breast strips, and skip the chicken fajita seasoning altogether.
- Make a batch of this all-purpose taco meat seasoning to keep on hand for ALL of your Taco Tuesday meals.
- Skip the garlic mincing by picking up a jar of minced garlic in water.
- Same with the slicing by grabbing the pre-cut fajita veggies Walmart carries in the refrigerated produce section.
- And save some dicing with the fresh pico de gallo you can find in the same section… (Although there’s really something to be said for making your own with this fresh tomato salsa recipe I always keep on hand!)
- 1 (22-oz.) bag Tyson® Grilled & Ready grilled chicken breast strips
- 4 red, yellow, and/or orange bell peppers, cut into strips
- 1 medium red onion, cut into wedges
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons fajita seasoning (or all-purpose taco meat seasoning)
- juice of one lime
- 10 (6-inch) flour fajita tortillas, warmed
- Preheat the oven to 425 degrees.
- Dump the grilled chicken breast strips onto a baking sheet. Scatter sliced bell peppers, red onions, and garlic on top.
- Drizzle everything with about 3 tablespoons of olive oil, and sprinkle fajita seasoning over top. No need to stir just yet.
- Bake for 10 minutes. Remove the sheet pan from the oven and gently toss everything together.
- Place the pan back in the oven and bake for an additional 15 minutes or until the chicken is warmed through and the veggies are crisp-tender.
- Remove from the oven and squeeze the juice of one lime over top of the fajitas.
Serve warm on flour tortillas with the fajita toppings of your choice.
