BBQ Chicken Foil Packets
There are literally dozens of reasons to love this yummy BBQ chicken recipe... Not the least of which is that it features a hearty protein and side dish all in one. That's what these BBQ chicken foil packets bring to the table: tender, juicy chicken breasts smothered in your favorite BBQ sauce, along with fresh seasonal veggies!
Another reason? It might be the easiest grilled chicken recipe I've ever had the pleasure of prepping. Seriously, it easily scales up to make feeding a crowd a cinch -- or prepare it as written to easily feed your family dinner in a flash any night of the week.
How so? Because you can prep the foil packets earlier in the day, and then they're ready to grill on YOUR time. For me that means I can make them up in the morning or afternoon, before all of the evening sports craziness begins. Then I just toss them on the grill when we get home, while we enjoy a little family together time during the mere 25 minutes they take to cook up.
Chicken In Foil Ingredients
Since I'm basically feeding a crowd on a nightly basis, I love that I can stock up on all of the ingredients to make these BBQ chicken foil packets at Sam's Club. BIG package of chicken breasts? Check. Bulk bell peppers of all colors? Check. Olive oil? Again, check. Even my family's favorite BBQ sauce...
If you're looking to make this recipe for a cookout, you can round out your meal with some chips, like a variety of Pringles®, beverages (Gold Peak® Sweet Tea is one of our faves), and even desserts. It's a well known fact that Sam's Club's cookies are amazing!
Oh, and if you're lucky enough to have a store that has Scan and Go or In-Club Pick Up, you're pretty much guaranteed to be in and out in no time flat. I used the Scan and Go app on my last trip, and it was SO fantastically easy.
I simply used my phone to scan each item I wanted to purchase as I put it in my cart, and then I was able to bypass the checkout lane by paying through the app on my way to the exit. The cart checker clerk scanned my phone, quickly checked over my items, and I was on my way. EVERY store should have this!
BBQ Chicken Breast Recipe
Okay, back to the BBQ chicken breast recipe... Actually, these chicken foil packets are so stupidly easy to make, I'm not sure they even qualify as a "recipe". But I do have a few tips that will yield the best results.
First of all, use heavy duty aluminum foil to avoid holes and tears that will result in all of the wonderful juices leaking out while cooking. For the same reason, make sure you roll and crimp the foil tightly. This will help speed up the cooking time, as well, by sealing in the steam produced by the veggies. Also, turn the packets once while cooking to make sure everything cooks evenly. I use a pair of rubber-tipped tongs for this -- again to avoid tears.
Grilled Chicken Recipe (Or Baked!)
Basically, you just plop a chicken breast in the center of a large rectangle of heavy duty foil. Add some sliced bell peppers and red onions on either side. Brush the chicken breast with your favorite BBQ sauce, and drizzle the peppers and onions with a little olive oil. Sprinkle everything with salt and pepper, and then grill the packets for about 25 minutes, turning once.
But it gets better... You can totally bake these chicken foil packets! too. They'll taste great either way, so use the method that works best for you. We typically grill them, but I can't tell you how many times we've run out of propane midway through cooking dinner. So it's always a relief to know that I have a fallback method when making this grilled chicken breast recipe.
BBQ Chicken Foil Packets with Veggies
These juicy and flavorful BBQ chicken foil packets with peppers and onions are the perfect all-in-one meal! Make them up early in the day for dinner or prep a whole bunch of them for your next cookout...
Ingredients
- 4 boneless, skinless chicken breasts
- ½ cup BBQ sauce
- 4 bell peppers, sliced
- 1 large red onion, sliced
- ¼ cup extra virgin olive oil
- salt and pepper, to taste
Instructions
- Cut four pieces of heavy duty aluminum foil into 16-inch lengths.
- Lay a boneless, skinless chicken breast in the center of each piece of foil. Divide the bell peppers and onions into four portions, and sprinkle one portion around each breast.
- Brush each chicken breast with your favorite BBQ sauce. Drizzle the veggies with olive oil, and then sprinkle everything with salt and pepper to taste.
- Pull the short foil edges together and roll them down toward the chicken. Scrunch up the ends tightly to seal each packet.
- To grill these packets: Preheat the grill to medium-high heat and place the packets directly on the grill. Close the grill cover and cook for 25 minutes (or until the chicken reaches 165 degrees internally), turning once.
- To bake these packets: Place side by side on a baking sheet and bake in an oven preheated to 400 degrees until the chicken has cooked through to 165 degrees, about 25 minutes.
- Carefully unwrap each packet before serving. Brush each chicken breast with more BBQ sauce, as desired, and season with additional salt and pepper to taste.

I recommend letting your chicken foil packets rest for a few minutes before serving. They will be super steamy hot right off the grill or out of the oven! And this will allow the juices to settle in the chicken breasts, too. Serve on a plate in the foil (easy clean up!) with an icy cold Gold Peak® Sweet Tea for an all-in-one meal that everyone is sure to adore!

Would this be something I could prepare in advance for a camping trip. Make the foil packages prior to leaving for the trip, toss in a cooler, throw on the grill the next day????

Hi Jen! Yes, you could make them ahead for a camping trip. However, I would recommend freezing them and then cooking them from frozen. It will add some cook time, but you won't have to worry about any spoilage.
