The simplest recipes are most often the best, in my opinion, and it just doesn’t get much simpler than this quick and easy bruschetta recipe — if you can even call it a recipe. To make this yummy bruschetta, all you need is a fresh, crusty French baguette (I picked one up at the Walmart Bakery), fresh tomatoes, fresh basil, a fresh garlic clove, and fresh mozzarella cheese.
Notice the theme here? Simple and fresh = delicious! You’ll also need some extra virgin olive oil, coarse salt, and pepper.
First I sliced half of the baguette on the diagonal into 12 1/2-inch thick pieces. Place the slices on a baking sheet and toast them on the top rack of your oven at 450 degrees for about 5-6 minutes, until they turn golden brown around the edges. When the slices are cool enough to handle, rub each with a clove of garlic that’s been cut in half and drizzle with extra virgin olive oil.
In case you’re not aware, bruschetta actually refers to the toasted bread itself sans toppings. The bruschetta toppings can either be served as a dip on the side or spooned over the prepared bruschetta.
My personal favorite way to top bruschetta is with a simple mixture of diced tomatoes, diced mozzarella and fresh basil. Stir them all together with a drizzle of extra virgin olive oil and season with salt and pepper to taste.
I used a tasty mixture of red and orange cherry tomatoes that I found at Walmart. Their sweet and tangy flavor pairs perfectly with the fresh basil — I just love when tomatoes are in season!
Tip: Use a serrated knife to slice tomatoes — it makes slicing through the thin and slippery skin safer and easier!
This bruschetta recipe just packs so much flavor! I could easily eat it as a meal, but it’s also a fantastic appetizer. If you’re serving it as an appetizer to guests, spoon the bruschetta toppings on right before serving, or as I mentioned earlier, serve it on the side as a dip.
