Lightened Up Chicken Spinach Alfredo

While we’re already chatting about Bertolli, I have to tell you about their NEW Creamy Alfredo with Cauliflower & Milk. It’s seriously SO good, but it has HALF the fat and calories of classic alfredo! All thanks to a combination of cauliflower, fresh milk, and aged parmesan.

And I promise you won’t even miss them… In fact, I made the most amazing chicken spinach alfredo with it, and my kids had NO CLUE that I’d switched up the alfredo. Clean plates all around!

How To Make Chicken and Spinach Alfredo

Want to make this chicken spinach alfredo pasta, too? It’s sure to be an instant classic with your family. AND it’s equally perfect for an easy weeknight dinner as it is for Sunday supper — because it only takes 20 minutes to make!

I used penne pasta in this chicken spinach alfredo recipe, so the first thing I did was get the water for the pasta boiling and throw in the dry pasta…

PRO TIP: Shave some time off this step with this Instant Pot pasta method. Yes, you really CAN make pasta in your Instant Pot!!

Once the pasta is going, I sliced some chicken breasts into strips, seasoned them with salt, pepper, and garlic powder, and then cooked them in a skillet over medium-high heat until they were browned and cooked through.

Next I added some minced fresh garlic to sauté for about a minute, and then I poured the Bertolli Creamy Alfredo with Cauliflower & Milk over the top. Finally, I stirred in several handfuls of baby spinach and let it wilt into the sauce.

From there you just top your chicken spinach alfredo off with a sprinkle of finely grated Parmesan cheese, and dinner is served! Easy pasta recipes like this always go over well in my house (especially when paired with this 15-minute garlic bread made with the easiest ever 4-ingredient garlic bread spread)…

Chicken Spinach Alfredo With Penne Pasta

Ingredients

  • 1 (8-oz.) pkg. uncooked penne pasta
  • 2 tablespoons extra virgin olive oil
  • 1-lb. boneless, skinless chicken breasts, cut into strips
  • 1 teaspoon garlic powder
  • salt and freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 (15.2-oz.) jar Bertolli® Creamy Alfredo with Cauliflower & Milk
  • 4-oz. baby spinach (about 4 lg. handfuls)
  • 2 tablespoons finely grated Parmesan cheese

Instructions

  1. Cook and drain the penne pasta in salted water according to the package directions.
  2. While the pasta is cooking, season the chicken with the garlic powder, salt, and pepper. Heat the olive oil in a large skillet over medium-high heat. Sauté the chicken strips until browned and cooked through. Stir in the minced garlic and for about one minute.
  3. Pour the alfredo sauce over the cooked chicken, and then stir in the spinach. Continue to cook until the spinach is wilted.
  4. Drain the penne pasta, then add it to the alfredo mixture. Toss well to coat.
  5. Sprinkle the Parmesan cheese over the top and serve hot.
