We've always been big fans of Chex party pix, making our favorite homemade Chex mix in our slow cooker for parties and game day get togethers regularly. But sometimes the craving strikes, and I just don't want to make a party-size helping -- and I don't want to wait an hour-and-a-half to indulge either.
So I was excited to learn that Chex Cereals has a boatload of small batch recipes for Chex mix on their website, that can all be made in 15 minutes or less!

I had a tough time choosing which flavor to try first. Ultimately I settled on giving the Gingerbread Chex Party Mix a try -- perfect for the season!
Not only did this gingerbread-flavored Chex party mix recipe taste great, but it was every bit as simple to throw together as I'd hoped. Fifteen minutes from start to finish (not including cooling time) was spot on.
15-Minute Gingerbread Chex Party Mix
Ingredients
- 3 cup Chex® cinnamon cereal
- 3 cup Chex® wheat cereal
- 1 cup fancy mixed nuts
- 4 tablespoons butter
- ¼ cup dark brown sugar, packed
- ¼ cup dark molasses
- ¾ teaspoon ground cinnamon
- ¾ teaspoon ground ginger
Instructions
- In large microwaveable bowl, mix cereals and nuts. Line cookie sheet with waxed paper or foil.
- In 2-cup microwavable measuring cup, microwave butter until melted. Stir in brown sugar, molasses and spices uncovered on High about 30 seconds to 1 minute, until mixure is boiling; stir. Pour over cereals and nuts until evenly coated.
- Microwave uncovered on High 3 to 4 minutes, stirring and scraping bowl every minute, or until cereal just begins to brown. Spread on waxed paper to cool, about 5 minutes. Store in airtight container.

Chex party mix is perfect for gift giving! Package it up in an inexpensive glass jar (I picked this up at Walmart) and wind a little bakers twine around the rim for a festive hostess gift. Or an even less expensive option is to reuse the empty nut containers and wrap the outside with Christmas gift wrap.
