I will never grow tired of the abundance of fresh fruit available in the summertime. I’m like a kid in a candy store when I hit our local farmers’ market — I want it ALL!
My kids, on the other hand, sometimes need a little more coaxing. I recently mentioned how I discovered that simply cutting up fresh fruits and veggies and leaving them on the counter is an effective way to get them to eat more. But if I really want to see the fruit fly off the plate, I make a batch of this key lime fruit dip and stand back.
Here’s the thing — there are a LOT of fruit dip recipes available on the Internet, but a good portion of them are filled with ingredients that I would not serve my kids. Whipped topping, pudding mixes, even chunks of pie… What? I want a healthy fruit dip that complements my seasonal fruit without totally destroying the nutritional benefits, and of course, it has to taste good.
This key lime fruit dip hits all of the requisites. It starts with Dannon® Oikos® Key Lime Greek Yogurt, which means my kids are getting double the protein of a regular low fat yogurt, along with active yogurt cultures and a healthy dose of calcium. I love that Oikos recently changed their recipe to use whole milk — we’re BIG fans of full fat dairy!
And here’s where one of my favorite dip hacks comes into play… Instead of using regular cream cheese, which always seems to take forever and a day to soften up, I use plain whipped cream cheese. We always have some on hand, because this is my kids’ preferred cream cheese for bagels. So I can whip up a mean fruit dip on a moment’s notice! I still like to whip the yogurt and cream cheese together with a hand mixer for an ultra creamy fruit dip, but if you don’t mind a few lumps, you can totally just give them a good stir, as well.
To this mixture, I add a little pure vanilla extract, the juice of one medium lime to really give it a boost of tartness, and two to three tablespoons of organic powdered sugar, depending on how much sweetening it needs. That’s it! With just five ingredients and less than five minutes, I can whip up the most amazingly creamy and delicious key lime fruit dip for any occasion — cookouts, lunches, snack time, or my favorite, lounging by the pool.
Even better, you can pour the fruit dip right back into the Oikos Greek Yogurt container to save on dirty dishes. Because who wants to be stuck inside loading the dishwasher when the sun is shining?!
