Elementary school seems like it was a lifetime ago -- and I guess it kind of was... But I can still remember the thrill of walking into the cafeteria mid-day to find these s'mores bars on the lunch menu. Those were always the best days!
I mean, what's not to love? Crunchy graham cracker cereal, sweet and gooey mini marshmallows, and all that silky smooth milk chocolate. Only two things could top them -- impromptu spelling bees (I always won) and library day (new books, yay!). I guess you could say I was a bit of a nerd, lol.
It's been many years since I've made them, but when Malt-O-Meal recently sent me a bag of their Honey Graham Toasters Cereal, my tried and true s'mores bars recipe immediately popped into my head.
My kids, on the other hand, wanted to tear into the bag immediately, as they do with all cereal as soon as it enters our home. It's a running joke in our family that we spend more on cereal and milk each week than on produce and meat. And it's very nearly true! They seriously DO down an inordinate amount of cereal on a weekly basis.
Which brings to me to why I love Malt-O-Meal Cereal so much: a) the HUGE 2 lb.+ size bags, b) the low prices, and c) the great taste. That's pretty much the trifecta by which I judge every product I purchase during a grocery shopping trip. You know, because feeding five kids costs A LOT.
And? Truth be told, Malt-O-Meal would have had me at the resealable bag. I mean, why don't all bagged products come with this feature?!?
How To Make S'mores Bars
Making these s'mores bars couldn't possibly be any easier... We're talking 5 minutes if you're really hustling, 10 minutes tops.
Just heat mini marshmallows, milk chocolate chips, butter, and a small amount of corn syrup to a boil on the stove top. Pour this mixture over 8 cups of Malt-O-Meal Honey Graham Toasters cereal, and mix. Add in some reserved chocolate chips and mini marshmallows for texture, and press it all into a 9x13 pan.

Let it all cool and set up for about an hour -- or just pop the pan into the freezer for about 15 minutes to speed things along (typically my method of choice). Slice into bars, and they're ready to serve!
These s'mores bars are perfect for cookouts, after school snacks, last-minute bake sale treats (haven't we all been there?), even spur of the moment family game nights with the Nintendo Switch. I highly recommend making a batch ASAP.
Easy No Bake S'mores Bars
These easy no bake s’mores bars taste like a trip down memory lane… Crunchy graham cracker cereal, sweet and gooey mini marshmallows, and all that silky smooth milk chocolate, what’s not to love?!
Ingredients
- 8 cups honey graham cereal
- 1 (10-oz.) bag mini marshmallows, divided
- 1 (11.5-oz.) bag milk chocolate chips, divided
- 5 tablespoons butter
- ¼ cup light corn syrup
Instructions
- Grease a 9x13 pan well or line it with parchment paper, and set it aside.
- Measure out the cereal into a large bowl. Reserve 1 cup of the mini marshmallows and ½ cup of the milk chocolate chips, and set all of these aside for a moment, as well.
- In a saucepan, add the butter, corn syrup, remaining milk chocolate chips, and remaining mini marshmallows. Over medium heat, stir the mixture frequently until it's completely smooth and comes to a low boil.
- Pour the mixture over the cereal, and quickly fold it all together until the cereal is coated. Fold in the reserved mini marshmallows and milk chocolate chips.
- Transfer the mixture to the prepared pan, and press it down lightly with a silicone spatula.
- Cool for at least an hour before cutting into bars, or place the pan in the refrigerator for about 15 minutes to speed things along.
Notes
If appearance is important to you, don't fold in all of the reserved mini marshmallows and milk chocolate chips. Keep a few of each to sprinkle over the top of the bars after you press the mixture into the pan.
