When it comes to entertaining guests for the holidays, the menu always come together pretty easily for me. But beverages are another story...
Beer is a no-brainer. But I'm not particularly fond of beer myself, and I always like to make sure that I have something on hand that will appeal to all of my guests.
Which is why I always have a bottle of Kahlúa on hand. It's a fantastically versatile liqueur to keep on hand for get-togethers, especially when there are so many easy recipes that utilize it.
One of my favorites is this uncomplicated Kahlúa club soda cocktail. Mixing it up is nearly effortless - I mean it's literally just Kahlua and soda... AND pairs well with just about anything!

Simply combine two parts of your favorite flavor of Kahlúa with four parts chilled club soda. Pour over a tall glass of ice and serve. How easy is that?!?

Kahlúa Club Soda Cocktail
Ingredients
- 2 parts Kahlúa original liqueur
- 4 parts club soda - chilled
- ice
Instructions
- Fill a tall glass with ice.
- Pour Kahlúa into the glass, followed by the club soda.
- Stir and enjoy!

That would be a 'Kahlua Rickey' and is improved by adding a twist of lemon peel. Club soda and a liquor is a 'rickey', as in gin ricky (usuually garnished with a lemon twist, vodka rickey (usually garnished with a lime twist), rum rickey (usaually garnished with a lime slice).
The rickey seems to have gone out of fashion in the 1960's. Created in the 1880's : "Origins of the Gin Rickey The Gin Rickey is often attributed to Joe Rickey, a lobbyist and bartender who worked in Washington D.C. in the late 19th century. According to legend, Rickey created the drink in the 1880s as a way to enjoy gin without the sweetness of traditional cocktails. "
The popularity seems to have slowly declined in Americans as the desire for sweet drinks developed, largely brought on by sweet cola drinks. A sad trend and growing loss.
