Bacon Wrapped Pickles, WHAT?!?!
If there are two foods I've adored since I was little, it's dill pickles and bacon. Who's with me?!
So when a friend casually mentioned that she'd made a batch of bacon-wrapped pickles for a holiday gathering recently, I was all like: "Hold up, wait a minute... BACON. WRAPPED. PICKLES???" I'd honestly never heard of such a thing, but apparently these keto fried pickles are VERY popular with the low carb crowd right now, being that they're keto-friendly and all.
Having tried and failed at the keto diet, I wasn't really interested in that aspect. But I'm ALL about a quick, easy, and flavorful 2-ingredient appetizer! Seriously, TWO INGREDIENTS -- that's one less even than my favorite pickle wraps.
In fact, I'm not even sure I can truly call these bacon wrapped pickle spears a "recipe", but we're just going to go with it...

How To Make Baked Bacon Wrapped Pickles
Making these baked bacon wrapped pickles is kind of a no brainer. I mean, obviously they're just pickles wrapped in bacon. And how hard is it to wrap slices of bacon around dill pickle spears and bake? Of course, it's NOT... But as always, I have a few tips to share that will help your pickle fries turn out their very best.
One of the things I worried about before making this pickles wrapped in bacon recipe for the first time was that the pickles would get mushy and the bacon wouldn't crisp up. I'm happy to report the pickles, in fact, were still crunchy, and my bacon did crisp up!
I attribute the texture of these keto fried pickles to two things:
1| Patting the pickle spears dry with a paper towel before wrapping them with the bacon.
2| Baking the bacon wrapped pickles on a cooling rack set over a rimmed baking tray on a rack placed in the upper third of my oven.
This allowed the air to circulate around the pickle fries, so I didn't need to turn them midway through. It also reflected the heat back down on the top of the pickle fries, which helped to crisp up the bacon.
Best Bacon For Pickle Fries
The type of bacon you use will also affect your results. Normally, I like to use a good, thick-cut bacon in my recipes, but a thinner cut definitely works best for this bacon wrapped pickles recipe.
We like this tasty Hickory Smoked Bacon from Sugardale. With its historic and secret blend of ingredients, it has delighted bacon aficionados for nearly a century with the perfect blend of smoke and sweetness.
Incidentally, I had the opportunity to visit the Fresh Mark plant that produces Sugardale bacon with a group of Ohio-based bloggers earlier this month. Talk about a fun opportunity for bacon lovers! We got to walk through the process of how bacon is made, starting with the fresh raw pork bellies and finishing with the slicing and packaging line.
It was pretty eye-opening -- I honestly had NO IDEA how many steps a pork belly goes through on its way to becoming the sliced bacon we know and love. But more importantly, I loved learning about their commitment to quality and sustainability. Nothing, and I mean NOTHING, goes to waste. ALL of the bacon scraps are repurposed into bacon bits and any waste is rendered into tallow.
FUN FACT: Sugardale produces enough bacon to feed 652 MILLION PEOPLE breakfast each year. Whoa!!!
Bacon Dill Pickle Fries With Ranch Dressing
Hands down, my favorite way to serve these dill pickle fries is with ranch dressing. The sour pickles plus the crispy, salty bacon are perfectly complemented by its cool, creamy flavor.
You can certainly make your own dressing if you have a recipe you love, but I'm just as likely to pick up a good quality ranch dressing from the refrigerated produce section. I'm told that my chip dip is pretty damn amazing with them, as well...
Naturally, if you're on the keto diet, you'll want to make sure you check the ingredients to ensure your dressing is keto-friendly in either case.
Whether you're making these bacon wrapped pickles as an appetizer or a snack, they're sure to be a HUGE hit at any gathering. Pickle Fries are best served fresh, but you can prep a tray of them ahead of time. Then just pop it in to bake when your guests arrive! You might want to double this recipe... Just sayin'.
Easy Bacon Wrapped Pickles (AKA Pickle Fries)
Ingredients
- 12 dill pickle spears
- 12 slice Sugardale Hickory Smoked Bacon
- ½ cup ranch dressing, optional
Instructions
- Preheat oven to 425 degrees. Set a wire cooling rack on top of a rimmed baking sheet.
- Pat the pickle spears dry with a paper towel, and wrap each one with one slice of bacon. Place on the prepared baking sheet.
- Bake on a rack in the top third of your oven for 20-25 minutes or until the bacon is crispy.
- Cool for 5 minutes. Serve with ranch dressing on the side for dipping.

Hi Amy! I'm not sure if you're referring to the long ovals or the round pickle chips, but either way, I'm thinking it wouldn't turn out well. It seems like the pickles would get mushy before the bacon crisps up because they're so thin. That said, I've never actually tried it, so if you give it a shot, I'd love to hear the results!

Um, leftovers? LOL, we've eaten them cold, but they really haven't made it to the fridge, yet. That said, I think I'd just pop them in the microwave for about 30 seconds to warm them up.
