However, zucchini just seems to be one of those veggies that a lot of cooks aren't sure how to prepare. I know I don't have a lot of zucchini recipes in my repertoire, either. So if you're already growing weary of your favorite zucchini bread, I've got an amazing baked zucchini recipe to share with you...

Baked Zucchini Recipe | Hidden Valley Ranch Cucumber Ranch Dressing

These Parmesan-ranch baked zucchini coins get loads of flavor from new Hidden Valley Cucumber Ranch, a delicious twist on the Original Ranch dressing. You're definitely going to want to keep a bottle or two of this flavorful salad dressing on hand, because I think you're going to want to make this yummy baked zucchini recipe over and over again this summer. It's super quick and easy, making it a perfect side dish!

Simply slice up a couple of zucchini into 1/4-inch rounds. Spread each side with a thin layer of Hidden Valley Cucumber Ranch, and then lay the rounds out on a baking sheet covered in aluminum foil (for easy cleanup). Sprinkle each coin with a little shredded Parmesan cheese and bake for about 15 minutes until the tops are starting to brown.

I mean, seriously... could it get any easier!?

I always like to add a little brightness to my baked and grilled foods with fresh herbs this time of year, and this baked zucchini recipe is no exception. I sprinkled some chopped fresh dill over the top, but chives, cilantro, or parsley would also be great alternatives.

  1. Preheat the oven to 475 degrees.
  2. Wash the zucchini and slice it into 1/4-inch thick rounds.
  3. Spread each side with a thin layer of Hidden Valley Cucumber Ranch, and lay them out on a baking sheet covered with aluminum foil. Sprinkle each coin with Parmesan cheese.
  4. Bake at 475 degrees for about 15-16 minutes or until the tops are starting to brown.
