I'm pretty sure I must have lived in the South in another life -- biscuits and gravy, sweet tea, and shrimp and grits all make my tastebuds sing. I just can't get enough of them!

Spicy Shrimp Romesco

Making the cheesy grits is every bit as simple as preparing the Spicy Shrimp Romesco. Both can be ready in under 15 minutes!

Quick & Easy Cheesy Grits

Yield: 6 servings

Quick & Easy Cheesy Grits

Ingredients:

  • 3 cups chicken stock
  • 1 cup polenta corn grits
  • 2 tablespoons butter
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Bring chicken stock to a boil in a saucepan.
  2. Add corn grits and turn heat down to medium-low. Stir with a long-handled spoon until the mixture thickens, about 3-5 minutes.
  3. Stir in butter and grated Parmesan cheese.
  4. Serve warm.
