How Do I Cook Zucchini in The Oven?
These Parmesan-Ranch Baked Zucchini coins get loads of flavor from new Hidden Valley Cucumber Ranch, a delicious twist on the Original Ranch dressing. You’re definitely going to want to keep a bottle or two of this flavorful salad dressing on hand, because I think you’re going to want to make this yummy baked zucchini recipe over and over again this summer. It’s super quick and easy, making it a perfect side dish!
Simply slice up a couple of zucchini into 1/4-inch rounds. Spread each side with a thin layer of the ranch dressing, and then lay the rounds out on a baking sheet covered in aluminum foil (for easy cleanup). Sprinkle each coin with a little shredded Parmesan cheese and bake for about 15 minutes until the tops are starting to brown.
I mean, seriously… could it get any easier!?
I always like to add a little brightness to my baked and grilled foods with fresh herbs this time of year, and this baked zucchini recipe is no exception. I sprinkled some chopped fresh dill over the top, but chives, cilantro, or parsley would also be great alternatives.

- 1/3 cup Hidden Valley Cucumber Ranch
- 2 medium zucchini
- 1/4 cup shredded Parmesan cheese
- fresh dill, chopped
- Preheat the oven to 475 degrees.
- Wash the zucchini and slice it into 1/4-inch thick rounds.
- Spread each side with a thin layer of Hidden Valley Cucumber Ranch, and lay them out on a baking sheet covered with aluminum foil. Sprinkle each coin with Parmesan cheese.
- Bake at 475 degrees for about 15-16 minutes or until the tops are starting to brown.
