A simple pickle brine with just a trace of heat, thanks to some sliced jalapeño peppers and a dash of crushed red pepper, gives sliced and diced veggies a bright, flavorful punch. I love them as a simple side dish, but they also make a fabulous condiment on burgers, fish tacos, sweet potatoes, and more!
Sweet & Spicy Quick Pickle Brine
Wanna give them a try? You’ll need a bottle of NAKANO Rice Vinegar for the base of the brine (use this printable coupon to save $0.50!). I used the Organic Original Seasoned Rice Vinegar, but you could actually swap in any one of their six other flavors depending on your mood: Natural, Roasted Garlic, Basil & Oregano, Citrus, Mango, and Balsamic.
To the rice vinegar, you’ll then add salt (obviously, it’s a brine), red pepper flakes, and honey for a touch of sweetness. That’s it! Pour this mixture over your favorite veggies and refrigerate for at least an hour.
Quick Pickled Veggies Options
I used a combination of cabbage, carrots, red onion, baby cucumbers, and half of a very large jalapeño pepper in my quick pickled veggies. But really you can just use whatever you have on hand that strikes your fancy!
Any sturdy vegetable will pickle well — radishes, green beans, bell peppers, cauliflower, and broccoli are all other good choices.
A batch of quick pickled veggies is such a fantastic way to use up all those leftover veggies that might otherwise get tossed. I actually found the carrot and some straggler baby cucumbers in the back of my produce drawer, so I was able to salvage them with this recipe. Can you believe how easy it is to make?
